I just found out about your wish for more recipes (today is Feb. 26) so I suppose I'm too late, but anyway I wanted to share a few thoughts.
I think winter is payback time. At the end of fall, canning shelves and freezer are full and ready for last-minute meals nearly every day, which means I can sew or quilt or knit until a short time before the evening meal and still have a nice menu to present.
Corn is delicious topped with salsa, as are potatoes. I happen to think most fresh foods don't need recipes! Just peel, chop, cook and serve!
